Healthy Chocolate Easter Eggs

Easter equals Chocolate Easter eggs, at least it seems to! My girls have returned from school with squeals of excitement over the pretty coloured foil eggs that they’ve been given. 
I am all for chocolate, no-one loves chocolate more than me, but I don’t love sugar (or at least, I don’t like what sugar does to my body or my kids’ mood). 
‘Normal’ chocolate Easter eggs are full of sugar, just 1 Cadbury Creme Egg (UK version) contains 26.5g (over 6.5 teaspoons) of total sugar. JUST ONE. 

So to keep things in balance while still enjoying ourselves I thought I’d share a super simple healthy chocolate easter egg recipe for you to try (also super cute as chocolate bunnies!)

Ingredients: 

  • 90g organic virgin cocoa butter or coconut oil 
  • 60g Raw organic cacao powder
  • 50g Brown rice or maple syrup
  • A little sprinkle of sea salt 
  • 1 tbsp of cocoa nibs
  • Optional: 6-8 drops doTERRA peppermint, wild orange, or ginger oil/nuts/dried fruit  

Method: 1 Melt coconut oil/cocoa butter in a bain mairie2 Mix in cocao powder3 Add syrup4 Add 6-8 drops of doTERRA essential oils or nuts/dried fruit4 Pour into silicone moulds (I bought this one from amazon) or ice cube tray – set in the fridge for an hour+ 
These melt quickly, so serve directly from the fridge! 
You can also decorate for a little fun! 😀
